Fish Tortillas with Spinach

  • 500 g Pangasius fillets, cut into 1.5-cm-wide strips
  • 2 pinches salt
  • a little pepper
  • 1 tbsp. peanut oil
  • 1 onion, finely chopped
  • 500 g leaf spinach
  • a little chilli flakes
  • 2 dl sour single cream
  • 1 lime 'rinsed with hot water, dabbed dry
  • 6 wheat tortillas

  • Season the fish. Heat the oil in a wide-bottomed pan. Sauté the onions, add the spinach, sauté for approx. 2 mins., cover and simmer over a medium heat for approx. 2 mins., arrange the fish on the spinach, cover and simmer for about another 10 mins. until cooked, season.
  • Combine the cream, lime zest and salt. Lay out the tortillas, arrange the spinach and fish with the lime cream on top, roll up or fold over.
