Ingredients

  • Pear & persimmon
  • 1 pears, cut into pieces
  • 1 persimmons, diced
  • 1 litre water
  • 3 star anise
  • Pomegranate
  • 1 pomegranate, seeds removed
  • 2 cinnamon stick
  • 2 cm ginger sliced
  • 1 litre water
  • Tangerine
  • 1 tangerines, segmented
  • 1 cinnamon stick
  • 1 litre water
  • 1 vanilla pod, cut open lengthwise, seeds scraped out

Instructions

  • Pear & persimmon

    Place the pear, persimmon and star anise in a jug, fill with water. Cover and leave to infuse in the fridge for approx. 1 hr.
  • Pomegranate

    Place the pomegranate seeds, ginger and cinnamon in a jug, fill with water. Cover and leave to infuse in the fridge for approx. 1 hr.
  • Tangerine

    Place the tangerine, cinnamon, vanilla pod and seeds in a jug, fill with water, mix well. Cover and leave to infuse in the fridge for approx. 1 hr.
  • Tip:

    To segment the tangerine, slice off the top and bottom, then peel all round the fruit down to the flesh. Using a sharp knife, cut out the segments between the white membranes.
