Ingredients

  • 2 tbsp. red currant jelly
  • 4 dl apple juice
  • 1.5 tbsp. Maizena cornflour
  • 2 eggs
  • 2 tbsp. honey
  • 1.5 dl single cream, beaten until light and frothy
  • 3 apples, cut into segments

Instructions

  • Simmer the apples with the jelly, covered, over a low heat in a wide-bottomed pan for approx. 15 mins. Uncover and completely reduce the liquid created, allow the apples to cool.
  • Combine the apple juice, cornflour, eggs and honey and mix well with a whisk, bring to the boil over a medium heat, whisking constantly. As soon as the mixture thickens and turns creamy, immediately remove the pan from the heat, stir for a further 2 mins. or so. Strain the crème, leave to cool, cover and leave to chill for about an hour. Carefully fold in the cream, plate up and arrange the apple slices on top.
