French toasties with banana and almonds

Ingredients

  • Filling
  • 1.5 banana
  • 1 tbsp dark almond cream
  • 2 pinches Himalayan salt
  • 0.25 tsp cinnamon
  • 2 tsp maple syrup or runny honey
  • Toasties
  • 4 slices whole-grain toast bread
  • 2 tsp maple syrup or runny honey
  • 2 tsp coconut oil
  • Toppings
  • a little maple syrup or runny honey
  • 0.5 banana, sliced
  • 20 g blueberries
  • 1 tbsp almonds, toasted, chopped

Instructions

  • Filling

    Finely mash the bananas with a fork. Mix in the almond butter, honey, salt and cinnamon.
  • Toasties

    Spread the filling over two slices of bread, top each with another slice of bread and press down gently. Heat the maple syrup and coconut oil in a non-stick frying pan, fry the toasties for 2-3 mins. on each side.
  • Toppings

    Plate up the toasties, cut in half if desired, top with the berries, bananas and almonds, drizzle with maple syrup. Serve lukewarm.
  • Tip:

    Instead of using almond butter in the filling, you can also use cashew or peanut butter. Serve fresh raspberries with the cashew butter and fresh strawberries with the peanut butter.
