  • 250 g mascarpone
  • 100 g icing sugar
  • 0.5 TL Bourbon vanilla powder
  • 1 EL lemon juice
  • 2 dl single cream, flaumig geschlagen

  • 150 g raspberries
  • 1.5 EL icing sugar
  • 1 EL lemon juice

  • 50 g raspberries

  • Frozen mascarpone

    Combine the mascarpone, icing sugar, vanilla and lemon juice in a stainless steel bowl. Incorporate the half-fat cream. Cover and put in the freezer for about 3 hours. Stir twice during this time.
  • Raspberries

    Squash the raspberries with the icing sugar and the lemon juice and strain.
  • Assembly

    Place the frozen mascarpone in the fridge for about 30 minutes before serving. Scoop the frozen mascarpone into glasses with a spoon. Drizzle the raspberry coulis and garnish with a few fresh raspberries and the citronella leaves.
