  • 4 dl cloudy apple juice
  • 2 tbsp. Maizena cornflour
  • 2 fresh eggs
  • 1 tbsp. lemon juice
  • 4 tbsp. sugar
  • 1 dl full cream, steif geschlagen


  • Using a whisk, combine the apple juice and all the other ingredients up to and including the sugar in a pan and bring to the boil over a medium heat, stirring constantly. As soon as the mixture thickens, immediately remove the pan from the heat, stir for a further 2 mins. Pour the crème through a sieve into a bowl. Place a sheet of cling film directly on top of the crème, leave to cool completely, cover and chill for approx. 2 hours. Stir the crème until smooth, stir in the cream.
