Fruit in curry sauce
Ingredients
- Rice
- 200 g long grain rice
- salted water, boiling
- Curry
- a little oil, for frying
- 150 g pineapple, cut into pieces
- 1 apples, chopped into pieces
- 500 g coloured peppers, sliced
- 1 tbsp curry powder
- 5 dl coconut milk
- 0.25 tsp salt
- a little pepper

Instructions

Rice
Cook the rice in salted water until almost soft. Drain the rice, cover and keep warm. -
Curry
Heat the oil in a non-stick frying pan. Stir fry the pineapple, pepper and apple for approx. 2 mins., add the curry and stir fry for approx. 1 min. Pour in the coconut milk, bring to the boil while stirring, reduce the heat and simmer for approx. 5 mins., season. -
Tip:
Garnish with coriander leaves before serving.
