Ingredients

  • Gazpacho
  • 200 g tomato, in pieces
  • 1 red pepper, in pieces
  • 1 yellow pepper, in pieces
  • 1 cucumber (approx. 400g), in pieces
  • 1 onions, in pieces
  • 100 g bread, in pieces
  • 1 garlic clove, halved
  • 2 tbsp tomato puree
  • 2 tbsp olive oil
  • 1.5 tsp salt
  • a little pepper
  • 3 dl vegetable bouillon, cold
  • Mozzarella balls & serving
  • 120 g mozzarella pearl, drained
  • 1 tbsp basil, finely chopped
  • 1 tbsp olive oil

Instructions

  • Gazpacho

    Puree the tomatoes with all the other ingredients. Cover the gazpacho and leave to chill for approx. 1 hr.
  • Mozzarella balls & serving

    Mix the mozzarella balls with the basil. Serve the gazpacho, top with the mozzarella balls and drizzle with a little oil.
