  • Ginger tea
  • 0.5 litre water, boiling
  • 100 g ginger, finely grated
  • Ginger beer
  • 2 lime, rinsed with hot water, dabbed dry, use a little grated zest and all of the juice
  • 150 g ground cane sugar
  • 2 litres sparkling mineral water
  • ice cubes as desired

  • Ginger tea

    Place the ginger in a measuring cup, pour the water over the top, allow to cool, cover and leave to steep for approx. 8 hrs. or overnight.
  • Ginger beer

    Strain the ginger tea, add the sugar, stir until the sugar has dissolved. Add the lime zest and juice, top up with the mineral water, add the ice cubes, serve.
  • Shelf life:

    Store in a sealed vessel for approx. 1 week.
