  • Dough
  • 150 g butter, soft
  • 150 g cane sugar
  • 1 eggs
  • 0.25 tsp salt
  • To finish the dough
  • 300 g white flour
  • 1 tsp cinnamon
  • 0.5 tsp ground cloves
  • 0.5 tsp baking powder
  • 2 cm ginger, finely grated
  • 1 organic orange, use grated zest only
  • To decorate
  • 1 fresh egg white
  • 100 g icing sugar

  • Dough

    Place the butter, cane sugar, egg and salt in a bowl, mix using the whisk on a hand mixer until the mixture becomes lighter in colour.
  • To finish the dough

    Mix the flour with all the other ingredients up to and including the orange zest, mix into the butter and sugar mixture, chill for approx. 30 mins.
  • To shape

    Roll out the dough in batches between two sheets of baking paper to approx. 2 mm thick. Cut out the gingerbread men. Place the biscuits on two baking trays lined with baking paper.
  • To bake

    Approx. 9 mins. in the centre of an oven preheated to 200°C.
  • To decorate

    Mix the egg white with as much icing sugar as it takes to produce a thick icing. Transfer the icing to a piping bag with a smooth nozzle (approx. 2 mm in diameter), pipe the eyes and mouth onto the gingerbread men, leave to dry.
