  • Pudding
  • 30 g dried goji berries, soaked overnight in water
  • 100 ml almond drink
  • 50 ml coconut milk
  • 0.25 tsp bourbon vanilla powder
  • 1 tbsp maple syrup
  • 2 tbsp chia seeds
  • 0.25 tsp ginger powder
  • Toppings
  • 2 tbsp coconut milk yoghurt
  • 0.5 blood orange, in segments (without membrane)
  • 2 tsp dried goji berries
  • a little coconut flakes

  • Pudding

    Drain the goji berries, blend in a food processor or blender with the almond milk, coconut milk, maple syrup, vanilla and ginger until smooth. Stir in the chia seeds, divide the mixture into 2 glasses (each approx. 200 ml). Cover and leave to absorb for at least 2 hrs.
  • Toppings

    Top the pudding with yoghurt, orange segments, goji berries and coconut flakes.
