Ingredients

  • Cashew & lime sauce
  • 3 tbsp cashew cream
  • 0.25 tsp chilli flakes
  • 1 dl soya drink or almond milk
  • 3 tsp coconut palm sugar
  • 1.5 tsp lime juice
  • 0.5 tsp Himalayan salt
  • 0.5 tsp pepper
  • Sandwich
  • 0.5 lime, use only the juice
  • a little Himalayan salt
  • 0.5 cucumber, sliced
  • 4 leaves head lettuce
  • 4 slices bread (e.g. wholegrain bread), toasted
  • 2 leaves red chicory
  • 1 avocado, sliced
  • 2 tbsp cress
  • 2 handsful alfafa and rocket sprouts

Instructions

  • Cashew & lime sauce

    Thoroughly mix all of the ingredients, cover and set aside.
  • Sandwich

    Drizzle the avocado slices with lime juice, season with salt. Spread the reserved sauce over the slices of bread. Top 2 slices of bread with the cucumber, lettuce leaves, cress, sprouts and avocado, drizzle the sauce over the top once again, place the remaining slices of bread on top, press down gently.
