Grilled avocado with tomato & mozzarella salsa
Ingredients
- Salsa
- 2 tbsp lime juice
- 3 tbsp olive oil
- a little pepper
- 0.5 tsp sea salt
- 400 g tomatoes, diced
- 120 g mozzarella pearl
- 1 shallot, finely chopped
- 1 garlic clove, finely chopped
- 1 tsp liquid honey
- 2 tbsp flat-leaf parsley, finely chopped
- 1 pinch cinnamon
- Avocado
- 2 avocado, halved
- 0.5 tbsp olive oil
- Charcoal/gas/electric barbecue
- 0.5 tsp sea salt
- Utensils

Instructions

Salsa
Combine the lime juice, oil, salt and pepper, add the tomatoes and all the other ingredients up to and including the cinnamon, mix. -
Avocado
Brush the avocado with oil, place in the grill tray. -
Charcoal/gas/electric barbecue
Cover and grill the avocado over/on a medium heat (approx. 200°C) for approx. 4 mins. on each side. Sprinkle with fleur de sel, serve with the salsa. -
Serve with:
Baked potatoes or bread.
