  • 2 tbsp lime juice
  • 3 tbsp olive oil
  • a little pepper
  • 0.5 tsp sea salt
  • 400 g tomatoes, diced
  • 120 g mozzarella pearl
  • 1 shallot, finely chopped
  • 1 garlic clove, finely chopped
  • 1 tsp liquid honey
  • 2 tbsp flat-leaf parsley, finely chopped
  • 1 pinch cinnamon
  • Avocado
  • 2 avocado, halved
  • 0.5 tbsp olive oil
  • Charcoal/gas/electric barbecue
  • 0.5 tsp sea salt
  • Utensils
  • For a grill or aluminium tray.

  • Salsa

    Combine the lime juice, oil, salt and pepper, add the tomatoes and all the other ingredients up to and including the cinnamon, mix.
  • Avocado

    Brush the avocado with oil, place in the grill tray.
  • Charcoal/gas/electric barbecue

    Cover and grill the avocado over/on a medium heat (approx. 200°C) for approx. 4 mins. on each side. Sprinkle with fleur de sel, serve with the salsa.
  • Serve with:

    Baked potatoes or bread.
