  • 3 tbsp. Marsala wine
  • 2 tbsp. raisins
  • 1 tbsp. olive oil
  • 2 red onion, cut into thin strips
  • 1 tsp. sugar
  • 1 tbsp. condimento bianco
  • 1 dl vegetable bouillon
  • 2 tbsp. flat-leaf parsley, finely chopped
  • salt and pepper to taste
  • 16 sardines (MSC), ready to cook
  • 1.5 tsp. salt
  • 2 tbsp. pine nuts
  • 16 wooden skewer


  • Mix the raisins and Marsala, cover and steep for approx. 15 mins.
  • Warm the oil, sauté the onions for approx. 5 mins. Scatter over the sugar and caramelize over a low heat. Add the vinegar and reduce completely. Add the raisins with the steeping liquid. Pour in the stock, bring to the boil, reduce the heat and simmer for approx. 5 mins. Stir in the parsley, season.
  • Rinse the sardines (inside and out) in cold water, pat dry, season with salt. Place 1 fish lengthways on a skewer.
  • Grill: Grill the sardines over/on a medium heat (approx. 200°C) for approx. 4 mins. each side.
  • Plate up the fish, drizzle over the sauce and scatter with pine nuts.
