Grilled Sausage and Courgette Gratin

  • 500 g courgette
  • 1 pinch salt
  • 2 eggs
  • 2 egg yolk
  • 1 clove of garlic, pressed
  • 3 tbsp. cream
  • 4 sprig marjoram to garnish
  • 125 g mild Gruyère cheese
  • a little pepper
  • 2 egg white
  • 4 long sausage, rolled and skewered for grilling (z. B. Escargot de proc vaudois; je ca. 130 g)

  • Grate the courgettes, unpeeled, into a bowl, season with salt. Leave the vegetables to stand for approx. 15 mins. Place the courgette in a sieve, squeeze out well, drain. Mix the eggs with the remaining ingredients and marjoram n a bowl. Grate the cheese. Stir in the courgettes, season. Beat the egg whites with the salt until stiff, carefully fold into the mixture with a rubber spatula. Divide the mixture into the prepared moulds. Remove the skewers from the sausages. Place one sausage on top of each courgette mix.
  • Bake for approx. 40 mins. in the centre of an oven preheated to 200°C.
