Grilled Sausage Snails with BBQ Sauce

  • 1 clove of garlic
  • 1 dl apple juice
  • 100 g ketchup
  • 3 tbsp. apple vinegar
  • 2 tbsp. light soy sauce
  • 1 tbsp. liquid honey
  • 0.25 tsp. cayenne pepper
  • 0.25 tsp. salt
  • 1 tsp. lemon juice
  • 4 long sausage, rolled and skewered for grilling Vaudois (approx. 130 g each)

  • Crush the garlic clove. Put it in a saucepan with the apple juice, ketchup, vinegar, soy sauce, honey, cayenne pepper, salt and lemon juice, bring them to a boil, reduce the heat, and simmer approx. 10 minutes.
  • Charcoal/gas/electric barbecue: Grill the sausage snails over/on high heat (approx. 240°C) for approx. 5 minutes on each side. Serve with the sauce.
