  • Marinade
  • 1 dl pineapple juice
  • 3 tbsp soy sauce
  • 1 tbsp lime juice
  • 3 tbsp ketchup
  • 1 tbsp peanut oil
  • 0.5 tbsp sesame oil
  • 1 tbsp cane sugar
  • 1 cm ginger, finely grated
  • 1 red chilli, deseeded, finely chopped
  • 1 kg chicken wings
  • Chicken wings
  • 300 g pineapple, peeled, halved lengthwise, stem removed, cut into chunks
  • 1 tsp sea salt

  • Marinade

    Bring the pineapple juice to the boil along with all the other ingredients up to and including the chilli, reduce the heat, simmer for approx. 10 mins., allow to cool. Add the chicken, mix with the marinade, cover and leave to marinate in the fridge for approx. 2 hrs.
  • Chicken wings

    Place the marinated chicken and pineapple on a baking tray lined with baking paper, season with salt. Bake for approx. 25 mins. in the lower half of an oven preheated to 240°C.
  • Serve with:

    Jasmine rice.
