JaMaDu Chicken Nuggets with Mango Ketchup

  • 1 tsp. rapeseed oil
  • 100 g mango, cut into pieces
  • 0.5 onion, finely chopped
  • 1 tbsp. water
  • 0.5 tsp. salt
  • a little pepper
  • 3 tbsp. ketchup
  • 500 g waxy potatoes, cut lengthways into quarters
  • 8 frozen chicken nuggets (ca. 320 g)

  • Heat the oil. Sauté the onions, adding the mango for a short time. Add the water, cover and simmer over a medium heat for approx. 2 mins., season the sauce and leave to cool completely. Add the ketchup, puree, cover the sauce and refrigerate.
  • Place the potatoes on an oven tray lined with baking paper, season with salt. Add the chicken nuggets.
  • Bake in the centre of an oven preheated to 220°C for approx. 25 mins. Serve accompanied by the mango ketchup.
