Ingredients

  • Quinoa
  • 5 dl vegetable bouillon
  • 200 g quinoa
  • Salad
  • 180 g feta, cut into approx. 1 cm cubes
  • 1 avocado, diced
  • 50 g kale, cut into strips approx. 2 cm wide
  • 2 tbsp balsamic vinegar
  • 6 tbsp olive oil with lemon
  • 4 tbsp pomegranate seeds
  • 2 tbsp dried cranberries
  • a little sea salt
  • a little pepper

  • Quinoa

    Bring the stock to the boil with the quinoa, simmer over a low heat for approx. 15 mins. until almost soft, allow to cool.
  • Salad

    Add the feta and all the ingredients up to and including the pomegranate seeds to the quinoa, season.
  • Serve with:

    grilled meat, fish or tofu.
