  • Knöpfli
  • 1 tbsp clarified butter
  • 500 g knöpfli egg noodles
  • 2 spring onion incl. green part, cut into rings
  • 160 g ham in slices, sliced
  • 200 g courgettes, sliced
  • 250 g cherry tomatoes
  • Sauce
  • 200 g sour single cream
  • 0.5 tsp paprika
  • 1 dl milk
  • a little nutmeg
  • 1 tsp salt
  • a little pepper
  • 40 g medium-aged Appenzeller, grated

  • Knöpfli

    Heat the clarified butter in a large frying pan, briefly fry the knöpfli. Add the spring onions and ham, fry briefly (reserve the greens for the garnish). Add the courgette, cook for approx. 3 mins., then add the tomatoes and cook briefly.
  • Sauce

    Thoroughly mix the sour single cream with the milk, season. Add to the pan along with the cheese, heat through while stirring until the cheese has melted. Garnish with the reserved onion greens prior to serving.
