Ingredients

  • Yellow millet
  • 1 tbsp olive oil
  • 0.25 tsp salt
  • 2.5 dl water
  • 100 g yellow millet
  • Carrots
  • 2 Küttiger carrots, halved lengthwise, sliced diagonally
  • 1 tbsp olive oil
  • 2 tbsp water
  • 0.25 tsp salt
  • 1 tbsp white wine vinegar
  • 1 tsp sugar
  • Bowl
  • 1 blood orange, peeled, sliced
  • 4 burrata piccola (each approx. 50 g)
  • salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • Yellow millet

    Bring the water and salt to the boil, add the yellow millet, simmer over a low heat for approx. 10 mins. Remove the pan from the heat, cover the yellow millet and allow to absorb for approx. 10 mins. (without lifting the lid), allow to cool slightly. Stir in the oil.
  • Carrots

    Heat the oil in a frying pan, add the carrots, gently sauté for approx. 5 mins. Add the water, vinegar, sugar and salt, cover and simmer for approx. 5 mins., remove the lid and cook for a further 2 mins.
  • Bowl

    Serve the yellow millet, carrots, burrata and blood orange in a bowl, drizzle oil over the burrata, season.
  • Tip:

    Mix 1 tbsp of roughly chopped dill into the carrots.
