  • 8 kumquats, rinsed with hot water, dabbed dry, sliced
  • 1 dl water
  • 2 tbsp sugar
  • 1 sprig thyme
  • 4 dl champagne (e.g. Veuve Clicquot Rosé brut), chilled
  • 4 sprigs thyme

  • Place the water, sugar, kumquats and thyme in a pan and bring to the boil. Reduce the heat, simmer for approx. 5 mins., allow to cool, remove the thyme.
  • Divide the kumquats and juice between the glasses just before serving, pour in the champagne. Place a sprig of thyme in each glass.
  • Tip:

    Instead of kumquats, use 1 mandarin (in segments).
