  • 0.5 tbsp mustard
  • 3 tbsp apple vinegar
  • 4 tbsp rapeseed oil
  • 1 tbsp mayonnaise
  • 50 g low-fat quark
  • 1 tsp liquid honey
  • 0.25 tsp salt
  • a little pepper
  • 75 g celeriac, very thinly sliced
  • 1 red-skinned apple, diced
  • 100 g lambs' lettuce
  • 1 tbsp pumpkin seeds, toasted, roughly chopped

  • In a bowl, whisk the mustard with all the other ingredients up to and including the quark, season, set aside 4 tbsp of the dressing. Mix the celeriac and apple into the remaining dressing, leave to infuse for approx. 30 mins. Plate up the apple & celeriac salad together with the lamb's lettuce, drizzle the reserved dressing over the lamb's lettuce. Sprinkle with pumpkin seeds.
