  • 160 g yellow lentils
  • 500 g celery, schräg in ca. 5 mm dicken Scheiben
  • Sauce
  • 2 tbsp. raspberry vinegar
  • 4 tbsp. olive oil
  • 1 bunch peppermint, cut into thin strips
  • a little pepper
  • 1 tsp. salt
  • Gemüse
  • 300 g apricots, cut into segments
  • 250 g bunch of carrots, längs in feinen Scheiben
  • 1 spring onions, including green parts, cut into thin rings
  • Presentation
  • 2 bag mini mozzarella balls (je ca. 120 g), abgetropft
  • 3 tbsp. pine nuts, roasted

Instructions

  • Cooking the lentils

    Linsen ca. 6 Min. kochen. Stangensellerie beigeben, ca. 2 Min. fertig kochen. Linsen abtropfen, kalt abspülen.
  • Sauce

    Essig und alle Zutaten bis und mit Pfeffer in einer Schüssel verrühren, Linsen beigeben.
  • Gemüse

    Rüebli, Aprikosen und Bundzwiebel mit den Linsen in Bowls anrichten.
  • Presentation

    Mozzarella und Pinienkerne darauf verteilen.
