  • 5 dl Water
  • 0.25 tsp. salt
  • 150 g lentil stew
  • 1 tbsp. honey mustard
  • 2 shallot, finely chopped
  • 4 tbsp. herbal vinegar
  • 4 tbsp. rapeseed oil
  • 1 red chili, insides removed, finely chopped
  • salt and pepper to taste
  • 1 avocado 0.5 cut into slices, the rest cut into small cubes
  • 1 mango 0.5 cut into slices, the rest cut into small cubes

  • Boil the water with the lentil stew, cover and cook over a low heat for approx. 30 mins., drain the remaining liquid, season with salt. For the dressing, mix together the mustard with the chilli, season. Mix the diced avocado and mango and warm lentils with 3/4 of the dressing, allow to steep for approx. 15 mins. Divide the lentil salad onto plates, arrange the avocado and mango slices on top in a fan shape, drizzle over the remaining dressing.
