Lime Blancmanges with Kumquats

  • 3 lime 'rinsed with hot water, dabbed dry
  • 2 tbsp. Coconut-calamondin syrup
  • 2 tbsp. water
  • 1.5 dl full cream
  • 1.5 tbsp. sugar
  • 4 leaves gelatine, immersed for approx. 5 mins in cold water, drained
  • 150 g kumquats, cut lengthways into quarters
  • 2 cardamom pod, remove and use only the seeds

  • Bring the lime zest and juice to the boil with the remaining ingredients and sugar. Remove the pan from the heat. Dissolve the gelatine in the hot liquid, pour through a sieve into the prepared moulds, cover and chill for about 4 hours.
  • Mix the kumquats and remaining ingredients in a pan, bring to the boil, reduce the heat and simmer for approx. 5 mins.
