Ingredients

  • 60 g coconut flakes
  • 0.25 tsp. pepper, coarsely ground
  • 250 g sugar
  • 400 g salted macadamia nuts, (Pittjes)
  • 1 tsp. sea salt
  • 1 dl water

  • Mix the coconut flakes, salt and pepper in a bowl. Boil the sugar and water with the nuts in a wide-bottomed pan, over a medium heat, stirring constantly. Simmer until the sugar is dry. Continue stirring until the sugar becomes slightly liquid again and forms a glossy coating over the nuts. Immediately transfer the nuts to the bowl, mix well and allow to cool on a sheet of baking paper. Neatly parcel up the snowballs.
