  • 300 g elbow macaroni
  • 0.5 tbsp. clarified butter
  • saltwater, boiling
  • 200 g ham in slices, cut into pieces
  • 500 g courgette, coarsely grated
  • 0.5 tsp. salt
  • 120 g semi-hard cheese (e.g. Graubünden mountain cheese), coarsely grated
  • 3 tbsp. parsley, finely chopped
  • 1 dl single cream
  • a little pepper
  • 3 eggs


  • Cook the macaroni in boiling salted water until just al dente, drain, set aside. Heat the clarified butter in a frying pan. Fry the ham for approx. 3 mins. until crispy, then remove from the pan. Put the courgettes in the same pan, season and sauté for approx. 5 mins. The liquid released should evaporate completely. Add the reserved macaroni, ham, cheese and parsley to the courgettes, mix.
  • Combine the cream and eggs, season, pour the sauce over the macaroni, cover the macaroni rösti and leave to set over a low heat for approx. 20 mins. Remove the lid and continue to cook for approx. 5 mins. Carefully loosen the macaroni rösti at the sides using a frying spatula, tip out onto a large plate. Add a little clarified butter, slide back into the pan and finish cooking, uncovered, for approx. 10 mins.
