  • Mackerel
  • 4 mackerel, pre-ordered at the fish counter, filleted
  • 1 tbsp olive oil
  • 1 organic lemon, use 1/2 of grated zest and juice
  • 0.5 tsp salt
  • a little pepper
  • Salsa verde
  • 3 tbsp olive oil
  • 1 bunch flat-leaf parsley, finely chopped
  • 30 g unsalted, shelled pistachios, finely chopped
  • 0.5 tsp sea salt
  • 30 g capers, finely chopped
  • a little pepper

  • Mackerel

    Rinse the mackerel (inside and out) in cold water, pat dry. Combine the oil with 1 tbsp of lemon juice and lemon zest, season. Use the mixture to coat the mackerel inside and out.
  • Salsa verde

    Combine the oil with the remainder of the lemon juice (approx. 2 tbsp), parsley, pistachios and capers, season.
  • To grill

    Charcoal/gas/electric grill: Cover and grill the mackerel over/on a medium heat (approx. 200°C) for approx. 10 mins. on each side. Serve with the pistachio salsa verde.
  • Serve with:

    Grilled lemons, rice, salad
