Ingredients

  • 100 g butter, soft
  • 1 pinch salt
  • 100 g sugar
  • 130 g white flour
  • 2 eggs
  • 0.5 tsp. baking powder
  • 1 lemon
  • 2 tbsp. sliced almonds
  • 500 g damson plums, cut in half, pitted
  • Cinnamon Whipped Cream
  • 2 dl cream
  • 0.5 tsp. cinnamon

Instructions

  • Grease the oven tray and pre-heat the oven to 180°C. Plum tart: Beat the butter well until peaks form. Add the sugar, salt and eggs, beat vigorously until the mixture is light and fluffy. Finely grate in the lemon zest. Add 2 tsp of juice, mix. Mix the flour and baking powder, sieve in and quickly fold in. Place the dough on the prepared oven tray. Place the plum halves vertically in the dough and scatter over the flaked almonds. Bake for approx. 40 mins. in the lower half of the pre-heated oven. Remove, leave to cool.
  • Cinnamon Whipped Cream

    Shortly before serving, beat the cream with the cinnamon until stiff.
