  • 1 tbsp white balsamic vinegar
  • 1 tsp lime juice
  • 1 tbsp coarse-grain mustard
  • 200 g crème fraîche
  • salt and pepper to taste

  • Peel the mango, puree the flesh with the lime juice. Stir in the balsamic, mustard and crème fraîche, season. Refrigerate until ready to serve.
