  • 3 mango (approx. 200 g each), cut into 5-mm-thick slices
  • 0.5 lemon, use only the juice
  • 0.5 tbsp. ginger, finely grated
  • 1 puff pastry, rolled into a rectangle
  • 2 tbsp. butter, soft
  • 2 tbsp. sugar

  • Spread the butter and sugar over the base of the oven tray. Drizzle the mango slices with lemon juice, arrange in layers on the sugar and top with the ginger. Prick the dough firmly with a fork. Loosely place the dough over the mangos. Push the edge of the dough in-between the mangos and the oven tray.
  • Bake for approx. 35 mins. in the lower half of an oven preheated to 220°C. Remove, allow to cool a little, carefully turn onto a platter.
