  • 1 fresh egg yolks
  • 1 tsp mild mustard
  • 0.25 tsp salt
  • 1 tsp lemon juice
  • 1 dl rapeseed oil or olive oil (not cold-pressed)
  • a little pepper
  • a little Worcestershire sauce

  • In a bowl, thoroughly whisk the egg yolk with all the other ingredients up to and including the salt. Add the oil drop by drop to begin with, then more gradually, whisking constantly to form a thick mayonnaise, season.
  • Tip:

    - Use sweet, hot or coarse-grained mustard instead of mild mustard. - Stir a little wasabi paste into the finished mayonnaise for an extra kick.
