  • 0.5 tbsp. olive oil
  • 8 slices raw ham
  • 1 courgette (approx. 100 g), finely sliced
  • 1 onion, chopped
  • 1 aubergines (approx. 120 g), coarsely peeled, cut into small cubes
  • 1 pinch salt
  • 1 dl full cream, whipped until virtually stiff
  • 1 tbsp. oregano
  • 30 g Parmesan, grated

  • Place 2 slices of cured ham around the sides of each tin.
  • Heat the oil, sauté the onions and aubergine for approx. 15 mins., season, remove. Sauté the courgette in the same pan for approx. 3 mins., season. Share among the tins, press down.
  • Combine the whipping cream, Parmesan, oregano and oil, spread over the courgette, tap the tins on the work surface.
  • Top with the aubergine, press down, leave to chill for approx. 4 hrs.
