Ingredients

  • Marinade
  • 2 tbsp. beer
  • 1 tbsp. tequila
  • 1 organic lemons, use grated zest only
  • 1 red chili insides removed, finely chopped
  • 1 tsp. olive oil
  • 4 long wooden skewers
  • 24 organic peeled raw prawns
  • 4 spring onions mit dem Grün, längs halbiert
  • Grilling
  • 1 tbsp. olive oil
  • 0.5 tsp. sea salt
  • 0.5 bunch coriander, broken into pieces
  • 2 tbsp. salted peanuts, coarsely chopped

Instructions

  • Marinade

    Combine the oil, lemon zest, tequila, beer and chilli. Push the prawns onto the skewers, brush with a little marinade. Brush the spring onions with the remaining marinade, cover both and marinate for approx. 20 mins.
  • Grilling

    Charcoal/gas/electric barbecue: Cover the skewered prawns and spring onions, and grill for approx. 3 mins. on each side over/on a high heat (approx. 250°C), season. Sprinkle the coriander and peanuts over the top, drizzle with olive oil.
