Minced Beef Skewers with Creamy Pasta

Ingredients

  • a little butter
  • 0.5 onion, finely chopped
  • 1 clove of garlic, pressed
  • 500 g minced meat (beef and pork)
  • 1 eggs, whisked
  • 3 tbsp. fine wholegrain rolled oats
  • 3 tbsp. parsley, finely chopped
  • 0.5 tsp. salt
  • a little pepper
  • 12 wooden skewer
  • 4 tbsp. wholegrain rolled oats
  • 200 g noodles (e.g. tagliatelle)
  • clarified butter to fry
  • saltwater, boiling
  • 350 g leek, längs und quer halbiert, in feinen Streifen
  • 0.5 tbsp. medium hot curry powder medium-hot
  • 1.5 dl water
  • 1 dl single cream for sauces

  • Heat up the butter in a non-stick frying pan. Sauté the onions and garlic and allow to cool completely in a bowl. Set aside the pan. Preheat the oven to 60°C, warm the platter and plates. Place the meat and remaining ingredients including parsley with the onion and garlic in the bowl, season. Knead well by hand. Divide the mixture into 12 portions, with wet hands form approx. 8 cm-long rolls, place on the skewers. Coat the skewers in the oats. Heat the clarified butter in the same pan, fry the skewers all over, in batches, for approx. 8 mins. over a medium heat, remove, keep warm.
  • Cook the noodles in boiling water until just al dente, drain. Heat the butter in the same pan. Add the strips of leek, sauté. Add the curry and sauté briefly. Add the water, cover and continue cooking for approx. 5 mins. Pour in the cream, bring to the boil, season with salt. Return the meat to the pan, mix carefully, heat gently.
