Ingredients

  • Granita
  • 3 dl blood orange juice
  • 1 star anise
  • 70 g cane sugar
  • Orange salad
  • 1 tsp sugar
  • 2 orange
  • 1 tbsp lemon juice

  • Granita

    Bring the orange juice, star anise and sugar to the boil, reduce the heat, simmer for approx. 2 mins., allow to cool, remove the star anise. To freeze, pour the mixture into a wide-bottomed container. Freeze for approx. 4 hrs., scrape the mixture from time to time with a fork until frozen.
  • Orange salad

    Slice off the top and bottom of the oranges, then peel all round the fruit down to the flesh. Using a sharp knife, cut out the segments between the white membranes. Halve the segments crosswise, mix together in a bowl with the sugar and lemon juice, cover and leave to steep for approx. 1 hr. Serve the orange salad and granita together.
  • Tip:

    Replace the oranges with mandarins.
