  • Granita:
  • 3 dl blood orange juice
  • 1 star anise
  • 70 g raw sugar
  • Orange Salad:
  • 1 tsp. sugar
  • 2 orange
  • 1 tbsp. lemon juice

  • Granita:

    Bring the orange juice, star anise and sugar to the boil, reduce the heat, simmer for approx. 2 mins., allow to cool, remove the star anise. To freeze, pour the mixture into a wide-bottomed container. Freeze for approx. 4 hours, scrape the mixture from time to time with a fork until frozen. Slice off the top and bottom of the oranges, then peel all round the fruit down to the flesh. Using a sharp knife, cut out the segments between the white membranes. Halve the segments crossways, mix together in a bowl with the sugar and lemon juice, cover and leave to steep for approx. 1 hour. Serve the orange salad and granita together.
  • Orange Salad:

    Von den Orangen Boden und Deckel, dann Schale ringsum bis auf das Fruchtfleisch wegschneiden. Fruchtfilets mit einem scharfen Messer zwischen den weissen Häutchen herausschneiden. Filets quer halbieren, mit Zucker und Zitronensaft in einer Schüssel mischen, zugedeckt ca. 1 Std. ziehen lassen. Orangensalat und Granita zusammen anrichten.
  • Tipp:

    Orangen durch Mandarinen ersetzen.
