  • Apricot Almond Relish
  • 2 tbsp. raw sugar
  • 50 g shelled almonds, roasted, coarsely chopped
  • 100 g dried apricots, cut into cubes
  • 1 dl Water
  • 1 tbsp. lime juice
  • 0.5 tsp. sambal oelek
  • 0.5 tsp. salt
  • 1 tbsp. basil, finely chopped
  • Dukkah Creme Fraiche
  • 1 tsp. lime juice
  • 100 g crème fraîche
  • 2 tsp. dukkah
  • 0.25 tsp. salt
  • Season the rack of lamb
  • 2 rack of lamb (approx. 180 g each)
  • 1 tbsp. dukkah
  • 1 tsp. maple syrup
  • 1 tsp. salt

  • Apricot Almond Relish

    Place the apricots and all the other ingredients up to and including the salt in a pan, bring to the boil. Reduce the heat, simmer on a low heat for approx. 10 mins., allow to cool. Add the basil.
  • Dukkah Creme Fraiche

    Combine the crème fraîche, dukkah spice mix and lime juice, season with salt.
  • Season the rack of lamb

    Brush the rack of lamb with the maple syrup. Mix the dukkah spice mix with the salt, use to season the lamb.
  • Grilling

    Charcoal/gas/electric barbecue: Grill the rack of lamb over/on medium heat (approx. 200°C), for approx. 16 mins. all over. Serve with the relish and dukkah crème fraîche.
