Pappardelle with Pork Sausage Ragout

  • a little olive oil
  • 2 raw pork bratwurst (approx. 260 g, e.g. Luganighetta), with their skin casings removed, coarsely chopped
  • 1 clove of garlic, cut into thin slices
  • saltwater, boiling
  • 1 onion, chopped
  • 0.5 red chilli pepper, chopped
  • 1 tbsp. parsley, finely chopped
  • 100 g Pappardelle noodles
  • 2 tbsp. Pesto rosso (red pesto)
  • a little pepper
  • 2 tbsp. grated Parmesan

  • Heat the olive oil in a pan. Add the pork sausage with the peperoncini, sauté for approx. 10 mins. over a medium heat until golden brown. Stir in the parsley, pesto and olive oil.
  • Prepare the pappardelle according to the instructions, drain and divide into bowls. Reheat the ragout, arrange on the pappardelle.
