  • Patatas
  • 800 g waxy potatoes peeled, cut into 1 cm pieces
  • 4 tbsp olive oil
  • 1 tbsp paprika
  • 1 garlic clove
  • 2 tsp salt
  • Mojo verde
  • 1 garlic clove
  • 1 dl olive oil
  • 0.5 bunch parsley, leaves torn off
  • 2 tbsp apple vinegar
  • 0.5 bunch chives, roughly chopped
  • 1 red chilli pepper, roughly chopped
  • 0.5 bunch coriander, roughly chopped

  • Patatas

    Spread the potatoes on a baking tray lined with baking paper. Puree the oil with all the other ingredients up to and including the salt, mix with the potatoes. Bake for approx. 25 mins. in the centre of an oven preheated to 240°C.
  • Mojo verde

    In a blending cup, puree the oil with all the other ingredients up to and including the chilli pepper. Serve with the potatoes.
