  • 4 fresh egg yolks
  • 100 g frozen peas, defrosted
  • 2 tbsp. white wine
  • 200 g low-fat quark
  • 100 g Sbrinz cheese
  • 2 tbsp. Maizena cornflour
  • 4 fresh egg whites
  • 0.25 tsp. salt
  • a little nutmeg
  • a little pepper


  • Puree the peas with the egg yolks and the white wine. Stir in the quark, cheese and cornflour, season. Beat the egg whites and salt until semi-stiff. Fold the egg whites into the pea mixture, season. Place the mixture in the prepared moulds, bake immediately.
  • Bake for approx. 35 mins. on the bottom rack of an oven preheated to 180°C. To prevent the soufflé collapsing, do NOT open the oven.
