  • Court Bouillon
  • 1 onion, cut into quarters
  • 1 cm ginger, cut into slices
  • 8 dl beef stock
  • 1 star anise
  • 0.5 cinnamon stick
  • 1 tbsp. fish sauce
  • Ingredients
  • 100 g rice noodles
  • 150 g beef tenderloin pieces, cut into strips
  • 1 spring onions, including green parts, cut into thin rings
  • 50 g Mungo bean sprouts
  • 1 lime, rinsed with hot water, dabbed dry, cut into segments
  • 2 tbsp. coriander leaves (cilantro)

    Cook the onions and remaining ingredients, including the cinnamon, over a medium heat for approx. 30 mins. Strain the stock, return to the pan and bring to the boil.
  • Ingredients

    Prepare the noodles according to the packet instructions, drain and divide with the beef into 2 large soup bowls. Pour over the hot stock and leave to steep for about 1 min. Add the spring onions, lime and sprouts, serve with coriander.
