Ingredients

  • Satay
  • 2 plaice fillets (MSC) (approx. 80 g each), cut into strips approx. 2 cm wide
  • 1 avocado, not too soft, cut into 3 cm pieces
  • 0.25 tsp salt
  • 8 wooden skewers
  • oil for frying
  • Lemon balm oil
  • 1 tbsp lemon juice
  • 3 tbsp olive oil
  • 0.5 bunch lemon balm, roughly chopped
  • 2 pinches salt
  • 1 pinch sugar
  • a little pepper

Instructions

  • Satay

    Salt the fish and avocado, skewer the fish and avocado to create a wave pattern, brush with oil. Charcoal/gas/electric grill: Grill the skewers all over for approx. 6 mins. over/on a medium heat.
  • Lemon balm oil

    Puree all the ingredients or crush them using a mortar and pestle. Drizzle the lemon balm oil over the plaice and avocado satay, serve the remainder of the oil alongside.
