Plum and Yoghurt Pots

  • lemon balm to decorate
  • 800 g damson plums, pitted, cut into segments
  • 1 tbsp. raw sugar
  • 2 cinnamon stick, cut in half
  • 75 g five-grain flakes
  • 25 g almonds, coarsely chopped
  • 360 g plain yoghurt

  • Mix the plums with the sugar in a wide-bottomed pan. Add cinnamon sticks. Simmer over a low heat for approx. 4 mins. until almost soft. Place the fruit in a bowl, reduce the juice released to syrupy consistency, add to the plums, leave to cool. Remove the cinnamon sticks and set aside as decoration. Clean and dry the pan.
  • In the same pan, toast the flakes, almonds and sugar, stirring, over a medium heat, remove and leave to cool.
  • Arrange in layers: Arrange the yoghurt, plums and flake mixture in glasses in alternate layers. Decorate with the reserved cinnamon sticks and lemon balm.
