  • 250 low-fat quark
  • 50 g butter, soft
  • 0.25 tsp salt
  • 1 eggs
  • 1 organic lemon
  • 200 g zopf flour
  • 1 tsp baking powder
  • 8 plums
  • 8 cubes cane sugar
  • salted water, boiling
  • 6 tbsp cane sugar

  • Combine the quark with the butter, salt and egg. Grate a little lemon zest and stir in. Mix the flour with the baking powder, add and quickly combine to a smooth dough.
  • Slice the plums so that the two halves are still connected. Replace the stone with 1 sugar cube and fold the plums together again. Shape the dough into a roll, cut into 8 evenly-sized pieces. Flatten the pieces, place 1 filled plum in the centre of each piece, wrap in the dough and shape into a ball. Steep the dumplings in batches in gently simmering salted water for approx. 20 mins. per batch, remove with a slotted spoon, drain.
  • Coat the dumplings with the sugar. Serve with a vanilla sauce.
  • Tip:

    Replace the plums with apricots.
