Potato Nests with JaMaDu Salad

  • 400 g waxy potatoes, coarsely grated
  • 150 g leek, cut into 5-cm-long thin strips
  • 1 clove of garlic, pressed
  • 70 g medium aged Tilsiter, coarsely grated
  • 1 tbsp. white flour
  • 1 tsp. curry powder
  • 0.5 tsp. salt
  • a little pepper
  • 1 eggs, whisked
  • 1 tbsp. lemon juice
  • 1 tbsp. rapeseed oil
  • 3 tbsp. plain yoghurt
  • 1 tsp. liquid honey
  • salt and pepper to taste
  • 300 g baby lettuce

  • Mix the potatoes with the remaining ingredients and the egg. Shape 8 equally-sized nests by hand and place on an oven tray lined with baking paper.
  • Bake for approx. 25 mins. in the lower half of an oven preheated to 180°C. Scatter over the cheese and finish off in the oven for approx. 5 mins.
  • Mix together the lemon juice and remaining ingredients with the honey, season. Add the salad and mix.
