  • 100 g butter, soft
  • 1 pinch salt
  • 250 g sugar
  • 4 eggs
  • 0.75 dl milk
  • 2 lime ', rinsed with hot water, dabbed dry
  • 250 g white flour
  • 1.5 tsp. baking powder
  • a little yellow food colouring
  • a little blue food colouring
  • 200 g double cream cheese (Philadelphia)
  • a little red food colouring
  • 70 g icing sugar
  • 1 tbsp. lime juice
  • some sugar decorations (e.g. sugar smilies)

  • In a bowl, stir the sugar and salt into the butter. Add the eggs one at a time and continue to mix until the mixture is lighter in colour. Add the milk and lime zest.
  • Mix the flour and baking powder and stir into the mixture. Divide the batter into 3 parts. Colour one part with yellow food colouring and spread half of it into the prepared cake tin. Add a little blue food colouring to the remaining yellow batter to make it green, and then spread it on the yellow batter without mixing the two layers. Colour the second part blue and spread half of that on the green batter. Add red colouring to the remaining blue batter to make it purple, and spread it on the blue batter. Colour the third part red and spread half of it on the purple batter. Add yellow colouring to the remaining red batter to make it orange, and spread it on the red batter. Bake for approx. 40 minutes in the middle of an oven preheated to 180°C. Remove from the oven, allow to cool slightly, remove the rim from the tin, place the cake on a cooling rack and allow to cool completely.
  • Mix the cream cheese, butter, icing sugar and lime juice thoroughly. Spoon the mixture into a piping bag with a serrated nozzle (approx. 12 mm diameter) and pipe onto the cake. Decorate with smileys.
