  • 2 fresh egg whites
  • 70 g finest sugar
  • 1 pinch salt
  • 250 g red currants
  • 16 knobs of butter (z.B. Petit beurre oder Bretzeli)

  • Beat the egg whites with the salt until stiff. Add the sugar little by little and continue beating until the egg whites turn glossy. Crush some of the redcurrants with a fork and fold with the remaining redcurrants into the beaten egg white, then dollop the mixture onto the biscuits.
  • Gratinate for approx. 15 mins. in the centre of an oven preheated to 150°C. Remove from the oven, allow to cool a little, then leave to cool completely on a rack.
